National Chocolate Chip Day was May 15, but who really needs an excuse (or a specific day or time) to enjoy a delicious batch of chocolate chip muffins at Lehman’s? Our entire office enjoyed these sweet treats.
Ingredients
1 1/4 C. quick rolled oats
1 1/4 C. milk
1 egg
1/2 C. canola oil
3/4 C. brown sugar
3/4 C. chocolate chips
1 C. pecans
1 1/4 C. flour
4 tsp. baking powder
1 tsp. salt
Instructions
Combine oats and milk; allow to stand 15 minutes.
Preheat oven to 400 degrees Fahrenheit.
Stir egg, oil, 1/2 cup brown sugar, chocolate chips, 1/2 cup pecans into oat mixture.
In a large bowl, combine flour, baking powder and salt. Add oat mixture to flour mixture, stirring just until all dry ingredients are moist.
Fill lightly greased muffin tins 2/3 full and sprinkle with remaining brown sugar and pecans.
Bake 20 to 25 minutes.
