Homemade Sweets For Valentine’s Day!

Sure, there’s still time. All you need is a double boiler, some chocolate, a few well-chosen things to dip into that chocolate, and some patience.

Parchment paper works well as a cooling area/landing pad. You can move the chocolates easily off it once they’re set.

Lehman’s offers two models, the Double Boiler, and the Stainless Steel Double Boiler. I prefer the Stainless Steel Double Boiler because of its squared-off lid handle and three-ply steel lower pan. They’re well matched, though, and choice comes down to small preferences.

Homemade Sweets For Valentine’s Day!

Ingredients

    • Good quality chocolate (chips or chopped bars)

    • Optional dipping items:

    • Peanuts

    • Potato chips

    • Popcorn

    • Pretzels

    • Cookies

    • Fruit (strawberries, grapes, citrus slices, kiwi, etc.)

    • Candy fruit slices

    • Bacon (optional, for savory-sweet option)

    • About 6 ounces peanuts

    • 4 to 6 ounces melted chocolate

    • Potato chips (firm, whole chips preferred)

    • Melted chocolate (amount varies)

    • Popped popcorn

    • Melted chocolate

    Instructions

      1. Set up a double boiler with a small amount of water in the bottom pan.

      2. Heat water to a gentle simmer, never boiling hard.

      3. Make sure the top pan does not touch the water.

      4. Chop chocolate into even pieces.

      5. Add chocolate to the top pan in batches.

      6. Stir constantly as it melts.

      7. Add more chocolate only after the previous batch is fully melted.

      8. Keep water level checked so it does not run dry.

      9. Remove from heat if chocolate begins to overheat.

      10. Never allow water or steam droplets to get into the chocolate.

      11. Prepare a parchment paper–lined tray before melting begins.

      12. Work quickly once chocolate is melted, as it will begin to set as it cools.

      1. Place peanuts in a heat-safe bowl.

      2. Pour melted chocolate over peanuts.

      3. Stir until evenly coated.

      4. Drop by spoonfuls onto parchment paper.

      5. Allow to cool and set completely.

      6. Store in airtight containers.

      1. Lay chips out and pat dry if needed.

      2. Melt chocolate using double boiler method.

      3. Dip chips individually into melted chocolate.

      4. Allow excess chocolate to drip off.

      5. Place on parchment paper to set.

      6. Store in airtight containers once hardened.

      1. Spread popcorn in a single layer on parchment paper or cookie sheet.

      2. Melt chocolate using double boiler.

      3. Drizzle or flick chocolate over popcorn using a spoon or fork.

      4. Let cool completely.

      5. Break into clusters.

      6. Store in airtight containers to keep fresh.
