New Potatoes with Butter and Herbs

A wonderful way to use fresh potatoes and your favorite herbs.

New Potatoes with Butter and Herbs

Ingredients

  • 2 pounds small potatoes

  • 1/2 to 1 tsp sea salt

  • 1/2 cup unsalted butter, melted

  • 1/4 cup finely chopped mixed herbs: marjoram, chives, lemon basil, etc. (gardener’s choice)

  • freshly ground pepper to taste

Instructions

  1. Scrub the potatoes, but don’t peel them.

  2. Bring 3 quarts of water to a boil with the salt. Stir to dissolve the salt, then add the potatoes.

  3. Boil over medium heat until the potatoes are fork-tender, 15 to 20 minutes, depending on the size of the potatoes.

  4. Drain the potatoes, then toss them in a bowl with the butter and herbs.

  5. Season with pepper and serve.
