Refrigerator pickles are easy to make, and they’re a great way to use up those cucumbers from your garden. With some simple boiling and mixing, you’ll have instant pickles.
The recipe I use, as well as my whole family, comes from my dear grandmother (now 95 years young). My grandma is an amazing cook. Growing up in the Depression era, she has always been thrifty with what she has, and this valuable skill carries through her cooking.

Ingredients
2 C. white sugar
1 C. white vinegar
7 C. sliced cucumbers
1 C. minced or diced onion
1 C. diced green peppers
2 T. salt
1 T. celery salt.
Instructions
Boil together white sugar and white vinegar.
When cooled, mix with the rest of the ingredients and put in the refrigerator for at least a few hours before eating.
Taste improves as pickles stand.
